I really think pumpkin and pecans are a match made in heaven. Something about the pairing is just so right!
The first time I had pumpkin roll when I was a kid was just like this. I’m almost certain my sister Melissa made it and skipped out on the traditional cream cheese frosting and used butter pecan ice cream instead. It was lovely and I was just a bit disappointed when the next time I had pumpkin roll it wasn’t filled with ice cream.
